Taco Hamburger Casserole - Microwave Recipe

1 lb ground beef
1 T butter or margarine
1 medium onion chopped (about 1/2 cup)
4 drops Tabasco sauce
1 can (8ox) tomato sauce
1 pkg (1 1/2 oz) taco seasoning mix
1/2 c water
2 eggs, beaten
1 c dairy half and half
1 pkg (6oz) corn chips
8 oz Mozzarella cheese, shredded or sliced
1 c dairy sour cream (8 oz)
1/2 cup shredded cheddar cheese

Crumble beef into an 8-inch square ovenware dish. Cook in microwave 5-6 minutes or until meat is no longer pink. Stir after 3 minutes of cooking. set aside.

Place butter in one quart measuring cup. Cook in microwave until melted, about 15-30 seconds. Add onions. Cook in microwave 1 1/2-2 minutes or until onions are transparent.

Add Tabasco sauce, tomato sauce, taco seasoning mix and water. Stir. Cook in microwave 1 1/2-2 minutes.

Combine eggs and half and half. Add this slowly to tomato sauce, stirring constantly.

Place half of the corn chips in 2 quart casserole. Top with half of ground beef, half of mozzarella cheese and half of sauce. Repeat layers. Cook in microwave 15 minutes. Every 5 minutes turn dish 1/4 of a turn.

Top with sour cream and shredded cheddar cheese. Cover. Cook in microwave 1-3 minutes or until cheese is melted.
