4 cups fresh blueberries (I have also used strawberries or 2 cups of each)
1 tsp lemon juice
Cooking spray
1 cup all-purpose flower
½ cup sugar
1 tsp baking powder
1/8 tsp ground nutmeg
Dash of salt
1 tbsp vegetable oil
½ tsp vanilla extract
2 large egg whites, lightly beaten
2 tbsp sugar
¼ teaspoon ground cinnamon

Preheat oven to 350 degrees

Combine fruit and lemon juice in an 8-inch square baking dish coated with cooking spray. Stir gently.

Lightly spoon flour into a dry measuring cup, level with a knife. Combine flour, ½ cup of sugar, baking powder, nutmeg and salt in a bowl; make a well in the mixture. Combine oil, vanilla and egg whites; stir well with a whisk. Add to flour mixture, stirring just until moist. Drop dough by spoonfuls onto the fruit mixture to form 8 dumplings. Combine 2 tbsp sugar and cinnamon; sprinkle over dumplings.

Bake at 350 degrees for 35 minutes or until filling is bubbly and dumplings are lightly browned.
