1/4 cup butter
1/4 cup chopped onion
1/4 cup flour
1 14oz can chicken broth
1 12 oz can evaporated
Milk
3-4 large baked potatoes
Salt and Pepper to taste.

Toppings
1 cup shredded cheddar cheese
1 cut bacon bits
1/2 cup sour cream
1/2 cup green onions
1/2 cup chopped steamed broccoli

Directions:
Directions:
1. Melt butter in a large pot over med heat. Add onion cook stirring for 1-2 minutes. Stir in flour, broth, and evaporated milk.
2. Scoop tater pulp from 1 potato. Add to milk mixture. Cook over med heat, stirring constantly so that mixture will not scald.
3. Cube the rest of the potatoes skin and all and add to soup.
4. Add enough milk to make desired consistency. Heat through and season with salt and pepper to taste.
5. When you serve top with desired toppings.

If you don't want to take the time to bake potatoes, cube them and boil just until done.

This is a very good soup. The other one in this book is cheesier. This is more of a potato soup with cheese topping. Great soup, just ask anyone that has eaten it especially her husband, my son Michael.
