Kim's Cowboy Pecan Pie Recipe

1/3 cup margarine
1 1/2 cup sugar
1/2 tsp vanilla
1/3 cup corn syrup
3 eggs beaten well
1 cup chopped pecans
1 unbaked 8" pie shell

Directions:
Directions:
1. Combine sugar, syrup, and margarine in a heavy sauce pan, stirring frequently until margarine and sugar are dissolved. Remove from heat.
2. Let cool 4-5 minutes and then slowly beat in eggs and vanilla with a mixer.
3. Place pecans in pie crust pour mixture in pie shell and bake on a cookie sheet at 375 for 10 min then lower temp to 350 and bake 20-30 min longer.

If you want to make a 9"pie increase ingredients by 1/3.

This is different from a regular pecan pie, but just as good. It is firmer. Christopher Rivas loves this pie and his sisters love it almost as much. Thanks Kim for a great recipe.
