4 chicken breasts
2 c. toasted breadcrumbs
4 tbsp. melted butter (divided in half)
1/4 c. chopped onion
1/4 c. chopped celery
2 tbs. parsley flakes
1/2 c. chopped walnuts
lemon juice
dash of salt and pepper

Directions:
Directions:
Combine breadcrumbs, half the butter, onion, celery, parsley, walnuts,m salt and pepper, and enough water to moisten. Divide into 4 mounds and place each on a square of foil arranged on cookie sheet.

Brush both sides of chicken with lemon juice and spoon remaining butter over tops. Season with salt and pepper again.

Place cut open chicken breast over each mound; shape around stuffing, tucking sides under.

Bake at 350º for 45-50 minutes.
