6 oz. spaghetti (use 1/2 of a 12 oz. package)
2 eggs, beaten
1/4 c. grated Parmesan cheese
2 tbsp. butter
1/2 c. chopped pepper
1/3 c. chopped onion
1 c. dairy sour cream
1 lb. Italian sausage
1 can (6 oz.) tomato paste
1 c. water
4 oz. mozzarella cheese ( I use about 1/2 lb.)

Break spaghetti in half and cook according to package directions; drain well. While still warm, combine spaghetti with eggs and Parmesan cheese. Put spaghetti in well greased, 10 inch pie plate. With back of spoon, press it up around sides of plate to form "crust". Melt butter. Add green pepper and onion. Saute until onion is transparent. Add sour cream. Spoon mixture over spaghetti. Remove sausage from casing. Crumble sausage into skillet and cook until done. Drain off grease. Add tomato paste and water to sausage, mixing well. Simmer about 20 minutes. Spoon sausage mixture over sour cream. Bake in oven preheated to 350º for 40 minutes. Arrange grated mozzarella on top of pie. Return to oven just long enough for cheese to melt. I cover the pie with tin foil both before and after I add the cheese.
