Grease 2 10 inch (by 2 inch deep) round pans and line with wax paper cut to fit bottom and sides.

2 ½ c. all-purpose unbleached flour
2 c. sugar
1 ½ t. baking soda
1 ½ t. salt
½ t. baking powder
¾ t. cinnamon
½ t. cloves
½ t. ginger
1 ½ c. applesauce
½ c. water
½ c. Crisco (or Spectrum non-hydrogenated shortening)
2 eggs
1 c. raisins
½ c. chopped walnuts

Directions:

Mix all but raisins and walnuts with electric mixer. Stir in raisins and walnuts by hand and pour into prepared pans.

Bake at 325* for 30-35 minutes. Use toothpick test.
