Spray 9x13 pan with cooking spray.

Cut French bread into 6 slices, each 1 1/2" thick. Using a small, sharp knife, cut 2" long slits in one side of each piece of bread, 3/4 of the way through, creating a pocket.

Spoon 2 heaping tablespoons of the chips into each pocket. Press to close. Place filled slices into prepared pan.

Whisk together eggs, milk, cinnamon, and vanilla in medium bowl. Pour egg mixture over bread evenly; carefully turn bread over to coat both sides. Cover pan; refrigerate several hours or overnight.
