Hildy’s Breast of Chicken Prosciutto Recipe

Four chicken breasts, boned and skinned
2 tablespoons flour
4 tablespoons butter (1/2 cube)
4 slices of prosciutto (or very thin slices of ham)
4 slices of mozzarella cheese

¾ cup chicken bouillon or broth
½ cup white wine

Directions:
Directions:
Flatten chicken breasts with a meat cleaver or the heel of your hand. Dust both sides lightly with flour. Sauté slowly in butter, until brown on both sides.

Place on top of each chicken breast:
A slice of prosciutto (or ham)
A slice of mozzarella cheese

Add to the pan, and cook until reduced by half:
¾ cup chicken bouillon or broth

Add to the pan and reduce again by half:
½ cup white wine

Serve the chicken with the sauce left in the pan. Good with rice and undercooked green beans with lemon butter.
