Gruyere Chicken Recipe

4 flattened chicken breasts
plain flour
2 T olive oil
4.5 oz. sliced button mushrooms
3 scallions, sliced
1/2 cup cream (give or take -- it's a little smeared on the recipe card)
1 T brandy or red wine (once again, smeared on the recipe card, I'm not sure)
3/4 cup grated Gruyere or Swiss cheese

1. Dust chicken breasts with flour. Heat oil in a frying pan and cook 4-5 minutes on each side till golden brown. Add a little water and cover for 30 minutes. Transfer to a lined oven tray and cover with foil.
2. Add mushrooms and scallions to pan. Cook for 2 min. until scallion is soft. Add cream and brandy (or wine) and bring to a boil. Reduce heat and simmer for 1 minute until sauce reduces slightly. Season.
3. Spoon sauce over chicken and top with cheese. Place under broiler until cheese melts.

Once again, a recipe I learned from my mom, although I'm not sure she even remembers making it. I adopted it senior year of college, and it was one of the few dishes I actually took time to cook (okay I only made it a couple times) while living at the Magnolia house. You know, cooking is just tough to do when sharing a fridge with six other girls...
