2 sweet potatoes
1/4 cup butter
1/2 cup packed brown sugar
1/4 cup orange juice or lemon juice

Directions:
Directions:
Boil cut-up sweet potatoes in halves or quarters or bake whole sweet potatoes in jackets at 350 until tender. (will need to cool and peel afterward)

In a frying pan, melt the butter and brown sugar together until bubbly. Add the orange juice or lemon juice and stir until smooth. Add the cut-up sweet potatoes and cook slowly, turning occasionally until the sweet potatoes are caramelized, about 20 minutes. If syrup is too thin, add a bit more brown sugar.

Okay...I hate them but I had to do it for all those yam loving gobblers out there like dear ol' dad. Serves 6, but thinking of my story about my family and yams, I am tempted to say it makes 1 large serving for your Dad!
