2 cups flour
1/2 cup sugar
1 tbsp. baking powder
1/2 tsp. salt
1 tbsp. grated lemon peel
1/2 tsp. nutmeg
1/2 cup chopped walnuts or pecans (walnuts better)1/2 cup golden raisins
1/3 cup vegetable oil
2 eggs
1 cup shredded zucchini, packed and undrained

Directions:
Directions:
Sift dry ingredients. Mix in nuts and raisins. Mix eggs with oil, milk, and lemon peel. Add to flour and blend. Stir in zucchini (don't overheat). Bake in 9 in. square pan at 400 º for 30-35 minutes and if making muffins 15-20 minutes. Freezes well.
