Carrot Cake Recipe

2 cups Sugar
4 eggs
1 1/3 cups oil
2 cups of Flour
2 tsp baking soda
2 tsp baking powder
2 tsp cinnamon
4 cups grated carrots
3/4 cups nuts
1 box confectionery sugar
8 ozs of cream cheese
1 tsp vanilla
1 stick margarine

Beat sugar and eggs and stir in oil.
Sift together flour, baking soda, powder & cinnamon.
Stir into egg mixture.
Fold in carrots and nuts.
Place in a 9 x 13 inch dish.
Bake at 350 degrees for approx. 45 mins. to 1 hour.
Mix all frosting ingredients and frost when cake is cool.
