1 head of cauliflower
2x 900ml cartons of chicken stock
1 500 ml whipping cream
1 large onion chopped
5 stocks of celery chopped
3 tbsp flour
1/4 cup butter

Directions:
Directions:
Break cauliflower into small florets, chop onion and celery. Melt 1/4 butter in large saucepan sauté onion and celery till translucent. Add the flour making a rouge, keep stirring mixture will become glue like, whisk in chicken stock mix well. Add cauliflower and whipping cream and bring to a boil then simmer for approximate 2 hours.

For a low fat soup omit whipping cream or just use
1 % milk instead, use pam instead of butter. Try reduced sodium chicken stock as well.
