4 (5-oz) salmon fillets
Salt and pepper to taste
4 cloves fresh garlic, chopped
2 T. olive oil
1 cup white wine
4 oz. Italian roasted red peppers, chopped (sold by the jar)
1 t. capers, drained

Directions:
Directions:
Preheat oven to 400 degrees
Season fillets w/ salt and pepper and place in a shallow baking dish. Whisk together the garlic, olive oil and wine and pour over the fillets. Sprinkle capers and peppers over top of fish and bake for 15 minutes, or until fish flakes easily with a fork, in the thickest part (rule of thumb is 10 minutes per inch of thickness).
