Beef Stroganoff Recipe

1 T. flour
1/2 tsp. salt
1 Lb. top sirloin cut in 1/2 inch strips
2 T. butter
1 cup sliced fresh mushrooms (or canned)
1/2 cup chopped onion (or dehydrated)
1 clove garlic, put through press or minced if you're a die-hard


2 T. butter
3 T. flour

1 T. tomato paste
1 can beef consommé
1 cup sour cream
2 T. sherry

Directions:
Directions:
Combine the flour and salt; roll meat strips in mixture. Melt 2 T. butter in skillet, add sirloin, and brown on all sides. Add mushrooms, onion, and garlic; cook until onion is barely tender---about 5 minutes.

Remove meat and mushrooms temporarily from pan; melt 2 T. butter in pan drippings and add 3 T. flour, stirring to avoid lumps. Add tomato paste. Pour in consommé and cook, stirring constantly until mixture thickens. Return meat and mushrooms to skillet. Stir in sour cream and sherry; heat thoroughly but don't boil. Serve at once. This makes 3-4 servings.

*This is served with white rice, green salad, and rolls with jelly.

Linda's name is mentioned in many of my recipes and it must be explained that for 6 years we lived down the road from each other. In the summer we would share cooking and child care duties. One day she would cook while I watched Matt and Nate, and the next day we'd trade. While most women were having cookie bake-offs (1960's -'70's) we were having stroganoff bake-offs. This is my recipe. I'm hoping she'll include hers.
