Diet Low Carb Cabbage Lasagne Recipe

Ingredients: 1 med or lg head cabbage:
1 T olive oil 2 garlic cloves, minced 1 med onion, chopped 1 green bell pepper, chopped
1 to 1 ˝ lb ground beef or turkey
1 6-oz can tomato paste 1 8-oz can tomato sauce 1 tsp dried oregano 2 tsp salt 1 tsp black pepper
2 cups grated mozzarella 2 cups ricotta or cottage cheese
˝ c. (or more) parmesan cheese

Directions:Wash cabbage and remove tough outer leaves. Cut the head in half. Peel back the leaves, trying to keep them intact. (These will serve as the lasagna “noodles.”) Arrange the individual leaves on a steamer basket or tray and steam until nearly tender (3 to 5 minutes). Set aside.
Saute next four ingredients together until onion is transparent.
Add meat, and brown.
Drain off any fat or water that may have accumulated. Then add next five ingredients and combine well.
Coat a 9x13 pan with a little olive oil. Line the bottom with a layer of cabbage leaves. Top with half of the meat mixture. Add: 2/3 cup grated mozzarella and 1 cup ricotta or cottage cheese.
Repeat the layers of cabbage, filling and cheeses. Top with 2/3 c of mozzarella.
Sprinkle with Parmesan cheese
Bake at 350, covered, for 20-25 minutes. Uncover and bake 10 minutes more. Serves 8. |

Notes: I got this from the book Protein Power (Michael and Mary Dan Eades). It is not a low-calorie recipe, but it is great for a low-carb diet. It tastes fabulous--better than you might think from the name. People always ask for the recipe after they eat it.
