1 10oz. pkg. spinach, drained
1 tsp oil
1 small onion, chopped
4 cloves minced garlic (2-3 tsp)
1 4oz. can diced green chilies
1 large tomato, chopped
6 oz. cream cheese
1/2 C milk
1/2 tsp cumin
1 1/4 C shredded monterey jack
1 small can sliced ripe olives
chips or veges

Directions:
Directions:
Cook onion and garlic in oil for 8-10 minutes. Add tomatoes and chilies, stir 'til hot and remove from heat. Beat cream cheese, milk and cumin 'til smooth. Reserving 2 T of cheese, add the rest, the spinach and cooked veges mixing well. Spread in a shallow 1 quart baking dish. Sprinkle with olives if desired and remaining cheese, and bake at 450º for 15-20 minutes, until hot and bubbly. Serve with chips or veges.
