3 lb. whole chicken fryer + 4-5 extra breast halves
6 yellow onion, quartered
15 garlic cloves (or ~ 8 tsp minced garlic)
1 quart cocktail sherry
1 16oz. can chicken broth
9 4oz. cans diced green chilies
2 24oz. cans diced tomatoes
2 tsp salt or to taste
1 lb. monterey jack cheese

Directions:
Directions:
Put chicken, onions, garlic, 1/2 the sherry and the broth into a large pot. If all ingredients not covered by broth, add more. Cover and simmer slowly 1-1 1/2 hours.
Mix chilies and tomatoes together. When chicken is cooked, tear into pieces and put back into pot. Add chilies and tomatoes, remaining sherry, and salt and simmer about another hour.
To serve: put chunks of cheese into bottom of bowls and pour stew over.
