2 1/2 to 3 lb chicken, cut up
Flour for dredging
1/2 cube butter
Salt and pepper

Preheat oven to 425 degrees. While the oven is heating, put in a shallow open pan (9 x 13”), to which you have added 1/2 cube) butter. Let the butter melt, but don’t leave it so long that it burns.

Rinse a 2 ½ to 3 lb cut-up chicken, skin on.

Coat chicken with flour, into which you have mixed salt and pepper. Remove pan from oven. Lay the chicken in the pan in a single layer. Bake, uncovered, 30 minutes. Turn it over and bake 15 minutes more, or until brown, and tender when poked with a fork. (Or after initial browning in the oven, you can bake it [covered] longer at a lower temperature (325), to make it more like Grandma Vera’s chicken.) You can use the fat and brown bits in the pan to make gravy.
