6 large flour tortillas
1 lb. ground beef
1 sm. onion, chopped
6 oz. cottage cheese
6 oz. sour cream
1 sm. can diced green chilies
1 can enchilada sauce--I use green
6 oz. shredded cheddar cheese

Directions:
Directions:
Brown beef w/ chopped onion in skillet. Remove from heat, drain grease and add cottage cheese, sour cream and chilies. Spoon mixture into a tortilla (about 2 big spoonfuls) & roll up. Place in greased 9x13 w/ seam of tortilla down. Pour enchilada sauce over top & sprinkle w/ cheese. Bake for 20 min. @ 350 degrees.

Who do I think I am--a Swede giving out a recipe for a Mexican casserole dish? Well, I AM queen of the casseroles, as attested by my family. They're easy to heat up when I get home late from work.
