Salad:
1 pkg. fresh spinach - dried well, cut into bite size pieces
1/2 medium cucumber - sliced thin
1/4 c. scallions - sliced
1 hard cooked egg - sliced
5 slices of bacon - fried and crumbled
1/2 c. Spanish peanuts
1/2 c. heavy cream
1 c. mayonnaise
1/4 lb. Roquefort cheese

Sweet 'n Sour Dressing:
2/3 c. vegetable oil
1/2 c. white vinegar
1/2 c. confectioner's sugar
2 T. sugar
1/2 tsp. salt
1/2 tsp. paprika
1/2 tsp. mustard
dash of ground cloves
dash of raspberry vinegar

Directions:
Directions:
Layer spinach, cucumber, scallions, and eggs. Mix together cream, mayo, cheese, and spread over salad. Cover and refrigerate overnight.
Combine all dressing ingredients in a jar. Cover and shake vigorously. Chill and store in fridge.
Before serving sprinkle bacon and peanuts on top. Serve with Sweet 'n Sour dressing.
