1/4 c. sugar
2 1/2 tbsp. butter
1/4 tsp. salt
2 tsp. anise seeds
1/2 tsp. lemon peel
2 c. flour

vegetable oil for frying
confectioners sugar

Directions:
Directions:
Beat eggs & sugar until lemon color. Mix in butter salt, anise seeds & lemon peel. Gradually stir in 1 1/2 cup of flour. Spread 1/2 cup more on a board; turn dough out onto board & knead until smooth. Wrap tightly in plastic wrap & let rest at room temperature for 30 min.

Work 1/2 of dough at a time on a well floured board, roll out each portion to a 6"x30" rectangle (dough will be paper thin). With a pastry wheel cut into 1"x6" strips; tie strips into loose knots. Into a deep 3-4 quart pan pour oil to a depth of 1 inch & heat to 360º . Add several cookies at a time & cook, turning once until golden brown all over (about 1 min total). Lift out cookies with a slotted spoon & let drain on paper towels. While warm sift powdered sugar generously over tops.
