2 cups flour
1 tsp. baking powder
1 tsp soda
1 tsp salt
1/2 cup shortening or butter
1/2 cup sugar
2 cups mashed banana
1 egg, slightly beaten
Optional: Add 1/2- 1 cup chopped walnuts and or chocolate chips

Directions:
Directions:
Preheat oven to 350º. Grease and flour loaf pan. Sift first four ingredients. Cream together shortening and sugar; add mashed banana and egg. Add to flour mixture and fold in walnuts and or chocolate chips. Bake for 40-45 minutes. Test with a tooth pick to see if it comes out clean.
