2C sifted flour
2C finely grated sharp cheddar cheese
1/2 lb. margarine (or ½ margarine and ½ butter)
Dash of cayenne powder

Preheat oven to 375 º

Mix together, form into a roll 1½ inch thick. Wrap in plastic wrap and refrigerate 1 hour.

1 egg white, beaten well
Pecan halves to decorate

Remove and slice into ¼ inch thick slices, place on a parchment lined cookie sheet. Brush with egg white and place pecan on top of each.

Bake about 15 minutes until firm and lightly brown. Sprinkle with salt when hot.

Serve either hot or cold.
