3 cups diced, cooked chicken (2 large breasts)
2 medium celery stalks, finely chopped
1 (8oz) sliced water chestnuts, drained
1/3 cup sliced almonds
1 (2oz) jar pimientos, undrained
1 tbsp. minced onion
3/4 cup light mayonnaise
2 tbsp. lemon juice
1/2 tsp. salt
1 tsp. black pepper
1 cup (2oz) canned French fried onions
6 oz. shredded Cheddar cheese

1. Preheat oven to 350. Grease an 11x7" baking dish. 2. Combine chicken, celery, water chestnuts, almonds, pimientos, onion, mayonnaise, lemon juice, salt & pepper in a large bowl; mix well. 3. Place in a prepared dish & top with French fried onions and cheese. Bake, covered, 30 minutes, or until cheese melts.
