1/2 lb. ground beef
3/4 c. onion - chopped
3/4 c. carrots - shredded
1 tsp. dried basil
1 tsp. dried parsley
4 T. butter
3 c. chicken broth
4 c. shredded potatoes
1/4 c. flour
2 c. American cheese
1 1/2 c. milk
1/4 c. sour cream

Directions:
Directions:
In a large pot, melt 1 T. butter over medium heat. Add veggies and beef and cooked until beef is browned.
Stir in basil and parsley. Add broth and potatoes and bring to a boil and simmer until potatoes are tender.
In separate pot melt remainder of butter and whisk in flour. Add milk and stir continuously until smooth. Stir in cheese and melt. Add sour cream and heat through but do not boil.
Gradually add cheese sauce to other pot with soup and stir constantly. Again heat through but do not boil.
