1/2 cup chopped onion
1 clove garlic minced
1 tbl fat
1 lb pork sausage
1 8 oz can tomato sauce
1 12 oz can whole kernel corn
1/3 cup sliced stuffed olive
1/2 tsp salt
For Cornbread Topping:
1/2 c flour
2 tbl sugar
2 tsp baking powder
1/4 tsp salt
1/2 cup corn meal
1 beaten egg
2 tbl melted shortening

Directions:
Directions:
Cook onion and garlic in fat. Add sausage and cook. Drain off fat. Add tomato sauce, corn, olives and salt. Mix well. Place in 2 qt casserole.
To make cornbread topping:
Combine flour, sugar, baking powder, salt, and cornmeal. Add 1 beaten egg, 2 tbl melted shortening and beat until smooth. Pour over meat mixture. Bake at 400 for 35 minutes.
