Meatloaf Mixture (pork, beef, lamb) 2 lbs
Onion2 (2 medium size, diced)
Goya Adobo Seasonings (1 tbsp)
Eggs (2)
Salt (1 tbsp)
Pepper (1 tbsp)
Ketchup (2 tbsp)
Oregano (1 tbsp)
Garlic Powder (1 tbsp)
Breadcrumbs
Bacon (1/2 pkg)
BBQ Sauce
Red Potatoes (5 large, cut up)
Carrots (10 small)
Celery (3 stalks cut up)

Directions:
Directions:
Mix all ingredients together (except for Bacon, BBQ sauce, 1/2 of the onions, potatoes, carrots and celery) and once blended well together shape into meatloaf shape and place in large baking dish. Take BBQ and brush all over the meatloaf to coat it, then take bacon and lay it over the meatloaf to cover it. Place remaining onions, potatoes, carrots and celery and place in around the meatloaf and pour a little water in the pan so that vegetables and meat do not stick or burn to the bottom (completely line the bottom of the pan). Bake at 350 degrees for one and a half hours. Remove bacon from meat, then cut up and serve along with potatoes and vegetable. A complete meal in one!

The first time I tried this receipe, I fell in love with it. It is so moist you don't need any gravy and you won't even want any.
