Chop Meat (1 1/2 lbs)
Sofrito (2 tbsp)
Oregano (tsp)
Crushed Coriander (1 tbsp)
Goya Sazon Seasoning (2 pouches)
Goya Adobo Seasonings (1 tbsp)
Salt (tsp)
Pepper (tsp)
Tomato Sauce (1 small can)
Water (3 tbsp)
Goya Discos (in frozen section) (2pkgs)
Vegetable Oil for frying

Brown chop meat and drain. Add remaining ingredients except for goya discos and oil and simmer for 15 minutes. Take goya discos put tbsp of meat in center and fold in half and seal down using fork to press down edges. Heat oil in large pan on stove top. Place discos in hot oil and cook to golden brown (flip over to do both sides).

This makes 20 empanadas. Double receipe for 40.

I got this receipe from Nanny. Everytime I make them, they are a crowd pleaser! You can never make enough of these! Double the receipe to make 40, you won't have many left over, trust me!!
