2 pounds large sweet potatoes, scrubbed
1 tablespoon olive oil

1. Preheat the oven to 450. Halve the potatoes and cut into 1/2 inch wedges. Toss or brush with the oil, salt and pepper.

2. Arrange the potatoes in a single layer on a nonstick baking sheet or on foil. Bake, turning once, until browned and crisp, about 35 minutes.

These are addictive baked "fries." Try them with sugar-free ketchup or a little fat-free mayo with a squirt of lime juice. They are a treat. 4 points for a cup; 234 calories.
