1 1/4 pounds red or gold scrubbed and quartered potatoes
1 tab. olive oil
1 teas. chili powder
1/2 teas ground cumin
1/2 teas. salt
1/4 teas dried thyme
1/8 teas. ground pepper
3 medium zucchini cut into large chunks
2 red bell peppers, seeded and cut into strips
1 sweet onion, sliced

1. Preheat the oven to 450. Combine the potatoes and oil in a 9x13 baking pan. Bake about 15 minutes.

2. Meanwhile, combine the seasonings and add to the potatoes. Then add the rest of the veggies and toss to coat. Bake until the veggies are tender, about 25 minutes longer.
