6 large apples
1 tsp cornstarch
3/4 cup sugar
1/2 tsp cinnamon
1/2 cup lemon juice
1 cup whipping cream or sour cream
2/3 cup white wine (optional)

Directions:
Peel and core 5 apples. Place in a soup pot and cover with 4 cups of water. Bring to a boil, reduce heat and simmer until apples are soft, about 15 minutes. Rub through a sieve or pulse in a food processor or blender to make a smooth puree. return to pot.
Dissolve cornstarch in 1 tbsp of water and stir into puree. Stir in sugar and cinnamon. Bring to a boil and remove from heat. Shred or mince the remaining apple; mix with lemon juice and stir in to soup.
If serving soup warm, heat through, then stir in the cream or sour cream and wine. If serving cold, chill first; blend in the cream and wine just before serving.

This is a delicious soup, like a creamy apple sauce. Almost dessert like. I made it for the kids and kept the wine for myself! The authentic recipe calls for potato flour instead of the substituted cornstarch if you are able to find it. The soup is traditionally served over noodles.
