2 lbs. carrots, halved lengthwise
1 can orange juice concentrate
2 1/2 tsp. ground coriander
1 tsp. salt
3/4 cup water
1 T butter
1/3 cup chopped fresh mint

Directions:
Directions:
Combine carrots, juice, coriander and salt in large skillet. Add water, boil over medium heat.
Reduce to simmer, cover, cook until tender crisp.
Uncover cook on high 7 minutes. Add butter, cook swirling pan until carrots are glossy and sauce is creamy. Stir in mint and serve.
