6 medium potatoes, about 3 cups cubed potatoes,
1-2 eggs
3-4 tbsp flour
1/2 cup finely chopped onions
kosher salt and pepper to taste

Mix all ingredients in blender or food processor. Heat oil in skillet, when hot add about 2 tbsp for each pancake to skillet. Cook over medium heat until golden brown and crisp.. Turn carefully and brown other side. Drain on paper towel, serve immediately.

Delicious with apple sauce or jelly. This is my Grandfathers recipe for Potato pancakes.
