1 large loaf of French bread (day old), crust removed and cubed
½ Lb. grated cheddar cheese (can use low fat if desired)
1 pkg. mild breakfast style pork sausage (low fat)
6 C roughly chopped spinach
8 eggs (3 yolks only separate and use only whites on 5 eggs)
3 C Milk (non fat or low fat OK)
½ tsp kosher salt
¼ tsp fresh ground pepper
1 tsp dry mustard
¼ tsp paprika
½ tsp Worcestershire sauce
2 T Butter

Make 1 day ahead.

Brown sausage and onion. When done remove to paper towels and use same pan to wilt spinach. 2 -3 minutes.

In a large bowl combine bread, spinach, sausage and grated cheese. In another bowl beat eggs, whites, spices and milk together.

Spray an 11 x 13 glass pas with nonstick spray. Add bread mixture to prepared pan. Pour egg mixture over bread. Dot with butter. Cover and refrigerate overnight

Remove from refrigerator 45 minutes before baking. Preheat oven to 350. Place a large baking pan or jelly roll pan in the oven as it preheats and add water until ½ inch covers the bottom. When oven reaches temp., place the uncovered strata into the pan of water and bake for 1 ¼ hours. Strata should puff and brown, cheese should be bubbly. Remove and serve immediately.

This dish is made ahead the night before and put in the oven to bake the next morning, making it a perfect Christmas morning brunch. Wake up early with the family; bring the Strata to room temp, then bake as the family opens gifts. The aroma of sausage and cheese bubbling in the oven fills the house and warms the heart. We serve it with sliced oranges and apples and mini sweet rolls from the local bakery.
