1 C Buttermilk
1 C water
2/3 C Cooking oil
2 C Sugar
2 Eggs
1 tsp Baking Soda
½ tsp Salt
2 C Flour
¾ C Unsweetened Cocoa Powder

Pumpkin Filling:
1 8 oz. Cream Cheese
1/3 C Canned Pumpkin
¼ C Sugar
¼ tsp Cinnamon

Glaze:
½ C Whipping Cream
4 oz. Semisweet Chocolate – chopped

Directions:
Preheat oven to 350º
Grease and flour two 9” cake pans

For Cake:
Combine all cake ingredients except flour and cocoa, in a very large bowl, using a large wire whisk, mix until well combined. Add flour and cocoa whisking vigorously until smooth. Divide batter between the two prepared pans and bake 30 – 35 minutes or until top springs back when touched. Cook on a wire rack in pans for 10 minutes. Remove from pans and cool completely.

For filling,
In a medium bowl, whisk together all filling ingredients until thickened. Spread on the cooled bottom layer of cake and top with 2nd layer.

For Glaze:
Bring cream to just boiling in a small saucepan over medium high heat. Watch and stir continuously. Remove from heat; add chocolate – DO NOT STIR. Let stand for 5 minutes then stir. Cool chocolate glaze for 15 minutes or until slightly thickened. Pour over the top of the filled cake allowing it to drip down the sides.

Chill until set – about 30 minutes. Remove and serve at room temp. with ice cream.
