1 3 lb. spaghetti squash
1T fresh parsley, chopped
2 tsp butter
½ tsp basil
¼ tsp salt
¼ tsp pepper
1/8 tsp sage
Optional: ½ C grated Parmesan cheese

Directions:
Wash squash, cut in half lengthwise and scoop out seeds. Place squash, cut side down, in a glass baking pan with about ¼ inch water in the bottom, cover with plastic wrap. Microwave on high for 10 minutes or until shell can be easily pierced with a knife. Let cool a few minutes until it can be easily handled.

Using a fork, scrape the spaghetti -like strands from the shell into a bowl. Discard the shell. Add spices and parmesan (if used), and toss well. Serve immediately.

This squash has a wonderful, firm texture that is very pleasing. Served as a side dish it is healthy and low fat. Cooked squash freezes well packed in freezer bags. Partially thaw before re-using then steam until tender about 5 minutes.
