Eggplant—wash and slice about ½ inch thick
Tomatoes—just wash them
Zucchini—wash and slice in half lengthwise (if they are small; the big ones must be sliced more)
Asparagus—wash, snap off the tough ends, and lay on tinfoil
Bell or banana peppers—wash and cut in half, removing seeds

Directions:
Directions:
Rub everything with olive oil. (Garlic-flavored is nice.) Sprinkle with regular salt or sea salt and a little pepper. Lay the vegetables on the pre-heated grill and cook until they are as soft and browned as you like them. (The tomato skin will brown and burst a bit.) You will learn which vegetables you prefer, and maybe add some ideas of your own (like grilling fresh peaches, perhaps).

In the summer, if you have a barbecue grill, you don’t need to dirty and heat up the kitchen cooking dinner. If you are grilling meat, you can do the vegetables on the grill too. Ron and I do this a lot.
