1 package chicken-flavored Rice-a-Roni

4 ounces (more or less) thinly-sliced water chestnuts
2 6-ounce jars of marinated artichoke hearts, drained and cut up (Save the juice.)
1/3 cup bell pepper, chopped
2 green onions (white and green parts) sliced

For the dressing:
Reserved juice from artichoke hearts
¼ cup mayonnaise
¼ teaspoon dry mustard
¼ - ½ teaspoon mild curry powder, to taste
1 tablespoon lemon juice

Directions:

Cook the Rice-a-Roni according to package directions, and cool.

Add the water chestnuts, drained artichoke hearts, bell pepper, and green onion.

Pour dressing over the rice mixture and mix. Chill well before serving.

I got this recipe from both Andee and "Aunt" Pearl Flynn, with slight variations. I could eat it straight out of the bowl with a spoon.
