Ingredients: 1/4 c. olive oil 2 c. chopped yellow onion 1 2/3 c. coarsely chopped red bell peppers (about 2 med.) 6 garlic cloves, chopped 2 Tbsp. chili powder 2 tsp. dried oregano 1 1/2 tsp. ground cumin 1/2 tsp. cayenne pepper 3-15 to 16 oz. cans black beans, drained, 1/2 c. liquid reserved 1- 16 oz. can tomato sauce
chopped fresh cilantro sour cream grated Monterey jack cheese chopped green onions

Directions:Heat oil in heavy large pot over medium-high heat. Add onions, bell peppers and garlic; sauté until onions soften, about 10 minutes. Mix in chili powder, oregano, cumin and cayenne; stir 2 minutes. Mix in beans, 1/2 cup reserved bean liquid, and tomato sauce (you may also need to add in 1 cup extra water or bean liquid, otherwise I find that it's a bit too thick after simmering). Bring chili to boil, stirring occasionally. Reduce heat to medium-low and simmer until flavors blend and chili thickens, stirring occasionally, about 15 minutes. Season to taste with salt and pepper.
Ladle chili into bowls. Garnish with chopped cilantro, sour cream, grated cheese and green onions. |

Notes: I love this recipe when I don't have a lot of time to cook, but want a yummy winter meal. It's very quick and easy to prepare, vegetarian, and has an excellent flavor. The combination of spices is perfect! I often make it as a pot-luck dish, and everyone always loves it.
