4-5 lg. potatoes - peeled and cubed
1 med. onion - diced
1 pkg. frozen broccoli
1 carrot - grated
half and half
small box Mexican Velveeta - cubed
salt to taste
pepper to taste

Directions:
Directions:
Boil potatoes and other veggies until potatoes are cooked. Drain off most of the liquid. Add Velveeta and allow to melt. Add half and half until desired consistency is reached. Salt and pepper to taste.
