2 T. unsalted butter
3-4 cloves of garlic
4 c. chicken broth
1 can (14 oz.) Italian style diced tomatoes
10 oz. fresh spinach - washed and coarsely chopped
8-10 fresh basil leaves - coarsely chopped
6 or 8 oz. pkg. fresh or frozen cheese tortellini
fresh grated Parmesan cheese for topping

Melt butter in a large saucepan over medium heat. Add garlic and saute about 2 minutes. Add broth and bring to a boil. Add tortellini and cook halfway (about 5 minutes for frozen, less is using fresh). Add tomatoes and juice, reduce heat to simmer and cook just until pasta is tender. Stir in spinach and basil and cook until wilted or 1-2 minutes. Ladle into bowls and top with a heap of Parmesan cheese. Serve with a thick slice of your favorite bread and dinner is done.
