For salad:
1 15 oz. can shoe peg corn
1 15 oz. can baby corn
1 15 oz. can small peas
1 can green beans
1 bell pepper chopped fine
1 cup celery, chopped
1 C. shredded carrots
1/2 C. chopped purple onion

For dressing:
1/3 C. oil
3/4 C. sugar
3/4 C. vinegar (I use apple cider)
1 tsp. salt and pepper
1 T. water

Directions:
Directions:
Drain corn, peas and beans and put all vegetables in bowl.

Boil dressing ingredients for 1 minute. Let cool and pour over vegetables.

This is one of my many recipes from Becky Soderstrom. It's great because it can be made ahead and it's delicious! This was a pain to make before I had a food processor; now it's a breeze.

Editor’s Note: Ask Grandma Fern to explain exactly how Becky is related to our family. Her husband was the son of the stepson of Great Grandma Nana’s first cousin. Something like that. Around here in Grandma Vera’s day, figuring these relationships out was a major pastime. Actually, now that I think about it, Becky may also be related to us on her mother’s side. Or her father’s. Or both. Grandma Fern will know.
