4 cups basil leaves
3 cloves garlic
1/2 cup pine nuts
1/2 cup Italian parsley
1 tsp. salt
1/2 to 1 cup oil
1/2 cup Parmesan cheese.

Directions:
Directions:
Put basil, garlic, pine nuts, parsley, and salt in food processor or blender with 1/2 cup extra virgin olive oil. Process, adding enough additional oil to make a smooth paste. Add the cheese and process a few seconds longer.

One day our friend Scotty showed up with a cold pasta salad that had been marinating in this fabulous pesto. Ever since it has been a hit at our house and in the summer we grow lots of basil. I use this sauce in my lasagne, on sandwiches, and sometimes, even behind my ears. It's THAT good!
