3 cups water
2 small onions
3 celery stalks
1# can tomatoes
1/2 tsp. pepper
1 T. salt
1 10 oz package frozen mixed vegetables
1 # ground beef (or turkey)
2-4 beef bouillon cubes
1/2 cup butter
1/2 cup flour

Directions:

Brown the meat, then drain. In same pot put all ingredients except butter and flour. Cook for 2 to 2 1/2 hours. When done, let cool and puree everything in blender. In empty pot add butter and flour on low heat, mix well, and brown the flour lightly. Gradually add pureed meat and vegetables and bring to boil, stirring. Serve.

This soup is a great way to serve vegetables to unsuspecting children (or adults). Linda and I have served this with baked potatoes and a green salad.

Editor’s Note: When Andee and Linda lived across the field from each other on the “400” ranch, we worked hard to figure out this dish, which was served at a favorite restaurant near Union Square in San Francisco. Once we “got it,” we used to serve it when we got the family together for New Year’s Day lunch.
