7 ounces of day-old bread
17 ounces boiling milk
5 eggs, lightly beaten
1/4 cup port wine
1/4 lb. melted butter
6 tablespoons of sugar
3 1/2 ounces seedless raisins
1 teaspoon cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon nutmeg
2 cups sugar
1 cup water
Butter for lining the mold

1. Preheat the oven to 275ŗ F;
2. Make a sugar syrup with the sugar and the water, until it browns;
3. Butter a cake tin with a hole in the center;
4. Soak the bread in the boiled milk;
5. Mix well in the mixer until well blended;
6. Mix the eggs separately;
7. Mix the eggs into the bread mixture, together with remaining ingredients;
8. Pour into the buttered cake tin, and place in the oven in a water bath for about one hour and a half;
9. When cool, unmold and pour sugar syrup over pudding.
