2 ½ cups whole-wheat flour, unsifted
1 ½ cups wheat germ
1/3 cup brown sugar, firmly packed
½ teaspoon salt
1 cup raisins

Mix together in a small bowl:
1 ¾ cups buttermilk
1/3 cup molasses
2 teaspoons baking soda

Directions:

Preheat oven to 325 degrees, and grease a loaf pan.

Mix first five ingredients in a large bowl.

In a small bowl, mix the buttermilk, molasses and baking soda. When molasses mixture starts to bubble, stir it into dry ingredients.

Spoon batter into prepared pan. Bake 1 hour, or until lightly browned. Remove from pan while still warm.

I found this recipe in a magazine in the 1970’s. It’s pretty healthful, but it is so delicious served warm with butter, that it would be worth making, good for you or not. The baking soda/buttermilk/molasses mixture is the only thing that makes this bread rise, so it is essential to work quickly after these ingredients are combined.
