1 3/4 Cup Flour
1/2 Cup Yellow Cornmeal
1/2 tsp Baking Soda
1/2 tsp Salt
1/2 Tbsp Sugar
1/2 Cup Cold Butter
6 oz E
xtra Sharp Cheddar
2Tbsp white vinegar
1/2 Cup Cold Water
Coarsely Ground Black Pepper

Mix together first 5 dry ingredients. Cut in butter, (like you were making a pie crust) until the mixture resembles small peas. With fork, stir in cheese, vinegar and cold water until mixture becomes a soft dough. Shape into a ball, and chill....have a glass of wine, call a family member!

In about an hour, preheat oven to 375. Grease a large cookie sheet. Break the dough into quarters. Roll out first quarter to a paper thin round of about 13 inches. Cut into 8 pie like wedges and place on cookie sheet. Sprinkle with pepper, then press pepper into dough.Bake for about 10 minutes or until brown and crisp. Remove to a wire rack to cool. Continue with next quarter. Store in an airtight container.
