1 pkg yellow cake mix
1 cup water
1/3 cup oil
3 eggs
4 cups sliced fresh or frozen rhubarb (if frozen, do not thaw)
1 cup sugar
1 pint (2 cups) whipping cream

Directions:
Directions:
Heat oven to 350, grease 9x13 pan. In large bowl combine cake mix, water, oil, and eggs. Beat at low speed to mix and at high speed for 2 min. Pour into pan.
Top batter evenly w/ rhubarb. Sprinkle w/ sugar.
Pour cream over top.
Bake for 1 1/4 to 1 1/2 hours or until toothpick comes out clean.
Cool 30 min. before serving
